The tour starts in the capital of India, Delhi, where you get to taste the hybrid cuisine of northern India. The traditional Kashmiri cuisine, "Wazwaan" takes you back to the 14th century, when the Mongol invader Timur invaded India. This royal cuisine of Kashmir has been influenced by Iranian, Afghan and Central Asian styles of cooking, despite which it has been able to create an identity of its own. The detailed preparation and traditional presentation of sumptuous meals, which comprises 36 courses makes "Wazwaan" a spectacular royal repast and a gourmet's delight. The days spent in different parts of Rajasthan takes you the land whose cuisine has been influenced by a war like lifestyle and ironically with much colorful festivities. Scarcity of water and lack of green vegetables also had its effect on Rajasthani cuisine. Get to know from the lady of the house how water is substituted with use of buttermilk and milk in cooking. Also visit the Amber fort palace and the city palace of Udaipur. At Nimaj get a chance to visit a nearby village and get an insight into the rural life of the region. A visit to the local markets surprises you with fascinating colors that end the monotony of sand.
