For many, Indian cuisine is known as spicy curries, and have rarely experienced or tasted the subtlety and variety of Indian food determined by geography. On this tour get to know how the geographical location of an area influences the eating habits and methods of cooking in each region. The tour starts from Calcutta, the capital of West Bengal. This eastern state is located along the fertile coast of the Bay of Bengal and abundantly watered by the monsoon rains. Indulge in fish, rice and a variety of green vegetables, some spicy and some lightly flavoured with herb seeds like cummin, coriander and fenugreek seeds which will titilate your taste buds. Delight your sweet tooth with a wide variety of sweets which Bengal is famed for. Also get an insight into the cuisine of the north eastern states which feature mostly steamed dishes using a lot of bamboo shoot and other forest produce. From the eastern coastal area we then head towards the fertile Gangetic plains and reach Lucknow renowned for its refined meat dishes blended with aromatic spices. The specialty of the region being Dum pukht cuisine, where rice, meat and an array of spices are put into a huge cooking vessel and sealed with dough and cooked for hours. In between sessions of learning and observing and tasting the variety of food you would also have guided tours of each city visiting places of historical and architectural importance. The tour takes you also to the capital of India, Delhi, where you get your first taste of the "Indian curry" and grilled tandoori food. North Indian cuisine has been influenced by the Mughal cuisine and the vegetarian food of the merchant community. Delight yourself with a Gujarati vegetarian thali at Ahmedabad, where you will be surprised by the fact that so many different dishes can be prepared using the same basic ingredient. The tour ends at the port city of Mumbai, where you get an opportunity to indulge in some sea food served, grilled, fried, cooked with coconut and spices as curries. At every destination you would get an opportunity to not only taste the different cuisines but also observe methods of cooking and at some places get hands on experience at cooking up some delicacies!
